One thing that both the guests and, hopefully, the new couple themselves look forward to at every wedding, is the ceremonial cutting of the wedding cake. Choosing the RIGHT wedding cake can sometimes be as difficult as finding a wedding dress. So many different shapes, types and flavors.

TECHNICAL ISSUES ARE ALSO IMPORTANT

Party cake creator Iveta Dmitrieva from Yvette is convinced that, whatever the trends, fashion will never be the determining factor when choosing a wedding cake. The choice can often be related to questions of a technical nature, for example, whether the cake should be transported far, because not every type of cake can be transported over long distances. The question should also be asked how large the number of guests is expected, because the sizes of the cake tend to be limited and each confectioner has his own technical capacity. "The visual effect and a large pyramid often look much more impressive than a single cake, although it will be twice as much in terms of weight. Therefore, I do not think that one large cake or three smaller ones, or a pyramid of individual cakes is a matter of fashion. All these types have been equally in demand for several years," says Iveta.

WEDDING CAKES THAT HIGHLIGHT YOUR PERSONALITY

The tendency to create personalized wedding cakes that highlight the personality and special story of a given couple is becoming more and more popular in the world.

There are couples who ask the confectioner to embed their beautiful engagement story or a special wedding day message on the cake. If you have decided that you want exactly that kind of cake, then you have to expect that the confectioner must have really great skill.  Kanelis patisserie Director Ieva Anderson points out that there are various options. "You can create a chalkboard-effect cake that will be black in color and that can be described with food markers, but you have to expect that the cost of such a cake will be much higher," says Ieva, noting that often it is the cost that determines which cake will eventually decorate the wedding table. "There are cases when couples, looking at Pinterest , have selected all kinds of pictures of wedding cakes, but we always have to ask the question, will we have enough money to order a particularly complicated wedding cake," says Ieva. She also points out that the once popular elements of wedding cakes – figurines and swans – are now rarely used, instead couples want to depict either their initials or, for example, their profile prints, which makes the wedding cake even more personal and unique.

THIS SUMMER'S TREND – CAKES WITHOUT GLUE

One of the current trends in the world of wedding cakes is wedding cakes without frosting

or so-called naked cakes , which means that the cake is made without icing and reveals everything that is in the bear's belly.

Ieva Andersone / Kāneļas patisserie admits that this is the trend of the moment, although thick sponge cakes are no longer as popular in Latvia as they used to be. At the moment, they are more suitable for weddings celebrated in country or vintage style moods. "Currently, wedding cakes are no longer as pompous as they used to be. As a result, the cakes have become rather simple, but tasteful.

– especially in summer, when a large part of living flowers are also edible," says Ieva.

METALLIC CAKES

Golden or black colored cakes are not rare in the world today, but one of the must have in many weddings. Ieva Anderson / Cinnamon Patisserie states that glass glazes or

mirror glaze cakes are currently experiencing popularity in Latvia as well.

In addition, using this technique, cakes can be in a wide variety of colors and acquire a metallic sheen. "If we talk about trends, then fashion has more influence on color ranges and style. But the choice depends on the personality, if the couple is stylish, innovative and bold by nature, they will also be open to everything new and unconventional, both in terms of appearance and content - austere decor, cool colors, black and gray tones. However, if the couple sticks to classic values, then the fact that a black cake will be in fashion will not mean anything and how the absolute majority will choose a classic, romantic look of the cake, which most often means an abundance of berries and flowers," assured Iveta Dmitrieva from Yvette .

STILL CURRENT SWEET TABLE

Ever since the sweets table appeared in our latitudes, it has not gone out of fashion.

Many couples choose a dessert table not only as an addition, but forego the traditional wedding cake altogether.

Ieva Anderson / Kanelis patisserie emphasizes that individual cupcakes are currently in fashion - couples are increasingly moving away from one big cake and maintaining individuality - offering guests many small cupcakes. "There are couples who don't want to overburden themselves on the wedding day, so cutting the cake is kept only as a tradition - they cut a piece of the cake specially intended for it, but offer ready-made cupcakes to the guests.

Often, couples move away from cakes altogether, offering guests excellent desserts that are visually beautifully designed and can be created, for example, as a cake. In addition, if we are talking about sweets tables, more and more couples are choosing that the offer on them is not only beautiful, but also healthy," says Ieva about the possibilities.

FIND YOUR REAL PASTRY

Finding the right confectioner will already be half the job. Iveta Dmitrieva from Yvette recommends,

when choosing a confectioner, study his works, familiarize yourself with the style in which he works and definitely meet to discuss everything in person.

“If you generally like the works of the chosen confectioner, but you don't find anything like your dream cake among them, you better keep looking. Because it means that you will be asked to provide something that this master does not do or does not specialize in, and then no one will be completely comfortable. You must be on the same page! You have to understand each other from half a word. During the conversation, you should feel as if everything is already perfect and just from the conversation, the taste buds stir up fantasy and everything has already worked out, although nothing has happened yet. You have to feel that you can let go and trust," says Iveta about finding the right confectioner.

ORDER TIME!

There should be no delay in ordering a wedding cake, especially if something complex is planned. Both the time to find a confectioner and the space allocated for the cake in the total wedding budget should be calculated. "There is no uniform law regarding deadlines, but the cake should be ordered as soon as possible. Others order it 8-10 months in advance and others only order 1-2 weeks before the wedding. It is better not to choose the second option," advises Iveta Dmitrieva from Yvette .
